Food-Schmood, I'm In No Mood!

I'm bored and unmotivated with food. Nothing is inspiring me. So here I sit with a fully stocked fridge, freezer and pantry and have no clue what I'm going to make for dinner.

I've asked you before and I'm asking again...

...what are you having for dinner?

Well....since I don't usually leave the office til 7:30 or so, it is too late to cook a major meal when I get home. So it is usually frozen fish, salmon or cod, cooked in the microwave and salad.
In my fantasy life my dinner would be homemade gazpacho or bouillabaisse or grilled salmon or roast chicken served on a flower filled terrace with my handsome husband....
Yep, total fantasy.

I feel your pain. I am cooked out. I prepare meals 6 days of the week & I am out of inspiration. I often find great recipes on Christy's blog:

i just got a whole chicken, and some swiss chard at whole foods. i will roast him up, make a creamy gravy and serve it with rice. and then sautee the swiss chard in a little olive oil and garlic. it's SUPER easy and fast. prepping the chicken takes about 5 minutes, putting him in the oven takes about 1 second and the oven does the rest of the work for about an hour and a half. the chard takes about 15 minutes start to finish. the gravy might take a little more effort but not much. i will reduce the pan drippings in a skillet with some chopped shallot and then add the heavy cream right at the end.

Don't know what you like to eat, but last night I got all the stuff to make a super chef salad. Tomatoes, cucumbers, ice berg, romaine, eggs, ham, carrots, celery - the works. It worked for quick "don't really feel like cooking" kind of meal.

That is all I got.

Gee, I thought I was the only one! After spending al day in the office I am too tired too cook. That is why Everyday Food from Martha Stewart is a Godsend! 30 mins max for each recipe

When I can't think of anything on my own I go to kraft.com....you can enter food you have and it gives you recipes that use them (they suggest to use their products in the recipe of course but it's not necessary)

I can so relate. Lately, I haven't been able to get very excited about cooking anything either. Maybe it's the heat. I'm about to go the market now to see if I can get inspired.

Thanks for all the ideas! It seems like the summer heat puts us all in a cooking free state of mind.

Want to know what I went with?

I had small red bliss potatoes so I made a potato salad and I paired it with sloppy joes. That's right, I browned some ground beef and had a Manwhich night! We also had some fresh corn. All in all we were very happy.

Take Out last night...I'm bored and unmotivated too. I've ordered a bone-in beef rib roast that I have to pick up today. What the fuck was I thinking?! It's 7 lbs. I've had to invite the neighbors over for dinner Saturday so they can help us eat this monstrosity. This is what I get for reading cookbooks!
